Fresh Turmeric Pickle

Turmeric in any form is a healthy ingredient  used fresh or in powder form.  Turmeric is considered highly auspicious and holy in India and has been used extensively in various Indian prayer ceremonies as well as wedding ceremonies for centuries.  My mum had put a couple of dry turmeric sticks in my suitcase when I got married. She said that it would bring me luck.  I remember that she used to heat oil and add a teaspoon of turmeric to it and allow it to cool to use it as a massage oil whenever we had any sprains.  She would even dab it on cuts to stop the blood flowing.  And whenever we had a cough she would make us drink hot turmeric milk  so that we could sleep well and not cough in the night.  

A couple of weeks ago I bought some fresh turmeric from the local farmers market to make this simple but healthy pickle.  Fresh turmeric is great for adding to curries and smoothies too.

Ingredients:

  • Fresh turmeric enough to fill a small bottle. I used about 10-12 pieces
  • 1 tsp salt
  • 1 tsp Turmeric powder
  •  Enough lemon juice to top the fresh turmeric (You can squeeze fresh lemons or used any ready made brand.

Method:

1. Soak the turmeric in cold water for 10-15 minutes.  After soaking them, I would recommend that you wear some gloves to prevent the turmeric from staining your hands and cover your work top with some kitchen paper to stop them from getting stained yellow. IMG_6036

2. Scrape the outer layer of the turmeric using the back of a spoon and give it a good rinse.

3. Cut the turmeric in thin slices and transfer them to a mixing bowl. Add salt and turmeric powder to the turmeric. Transfer these to a sterilised bottle. Add fresh lemon juice to it until it covers all the turmeric slices.IMG_6042

4. The pickle need to marinade for 2-3 days after which can be eaten as a condiment with your meal.

I often use small amounts of turmeric to my rice to give it a slight colour and recently I found this a recipe for turmeric aniseed rusks where a mixture of turmeric and milk are used to make the dough.
