Farari Sambharo ( Stir fry sweet potatoes and chilies)

On the days Hindus fast, there is a list of foods that they are “allowed” to eat. The list – often referred to as farali food – includes all the fruits and nuts, milk and milk products including yogurt. It also includes potatoes, sweet potatoes, cassava,chilies, tapiaco, ragigara flour etc.  In fact, the sumptuous delicacies you can eat in place of everyday food makes you feel that you are having a feast because of the variety you can make.  This fiery stir fry is one of my favourites.  They taste geat with farari puris, but you can have them with any Indian bread.

Ingredients

  • 1 medium sweet potato
  • 5-6 hot green chilies
  • 1 small Granny Smiths Apple
  • 1 tbls oil
  • 1 tsp cumin seeds
  • salt to taste
  • pepper to taste
  • lemon juice

Method:

  1.   Wash, peel and chop the sweet potato and apples into julienne and slice the chilies in two and then into halves.

2.  Heat the oil and add the cumin seeds.  Once they brown, add the julienned sweet potatoes, apple and chilies.    Add the salt and pepper and lemon juice.  Stir and close the lid of the saucepan for 4 minutes.This dish is made dry with no water or tomato added.

3.  Stir and the sambharo should be ready to serve.  This sambharo is usually served as side with the Indian thali but during the fasting month, it could be eaten with just some farari jeera puris.
