Yep – you read that right!! I made some jalebi ladoos a couple of weeks ago! I usuallymake jalebis following this traditional recipe but wanted to learn how to make instant jalebi so joined an online class with joindiaspo. Jalebis are Indian sweets usually made from fermented sour dough kind of a mixture. The pancake like mixture is spread in spirals in hot oil and once cooked it’s dipped inside a sugar syrup. My jalebis turned out great but got soft after a few days. A few friends suggested that I should try and make some ladoos out of the soft jalebi – so that’s how these ladoos were created.
3-4 tbls of sugar syrup ( left over from making jalebis)
1 tbls of ghee
cashews for garnishing
Instructions
Transfer the jalebis and sugar syrup left over from making the jalebis into a blender and blend until they are all mashed up well. If you are using store bought jalebis, then just warm up half a cup of water with 1 tablespoon of sugar. Let this boil for 2-3 minutes ans allow to cool.
Heat the ghee in a non stick pan and add the blended jalebis. The jalebis already had some cardamom, saffron and nuts in them so the blended mixture has all the flavours. Cook the mixture until its hot and not sticking to the pan.
Once the jalebis are hot enough to handle, make the ladoos using your hands or a mould and garnish them with cashews or any other toppings you fancy.
Serve them warm or cold as a dessert with any Indian meal.
