Froothie Evolve has actually changed the way I am be cooking. Last week I made a quick hummus recipe and this week I have been using the Froothie Evolve to make quick and easy soups as the weather has turned cold in UK. I made a quick and easy carrot and coriander soup with lots of ginger and garlic to give it some Indian flavours. I don’t use stock in my soup recipes but use herbs and spices to flavour it. This week carrots were really sweet and I couldn’t wait to make some soup with them.

Ingredients
10-12medium carrots
3-4cloves of garlic
1Inchfresh ginger
salt and pepper to taste
small bunchfresh coriander
1fresh green chili
some chili flakes to taste
Instructions
Wash and peel the carrots and cut them into small circles. Also peel the ginger and garlic .
Add the carrots into the Froothie Jug (Please note: With Froothie Evolve you get 2 jugs – both made of tempered glass. One jug has a heating element which allows you to cook & blend or steam & blend and perfect for soups so I used that one.) Also add the ginger, garlic, salt to the jug with 3 cups of water.
Switch on the Froothie manually or using your Bluetooth and pick the right soup option. You have the choice of smooth or chunky soup. I chose smooth soup. The soup took 30 minutes to make. About halfway I noticed the soup would stir itself a bit and continue cooking and towards the end, it blends everything to perfectly hot soup.
Once the soup is ready, carefully open the lid of the Froothie and pour it into a serving dish. Add a sliced chili to it to give it some kick. Sprinkle plenty of coriander to it and add pepper and chili flakes to taste.
