After coming home from spending time at Cromwell’s House, I just managed to make a quick lunch using whatever ingredients I had in the fridge. You can adjust the fruit and veg items as per your taste or whatever you have in the fridge. Hunger and resources in my fridge helped create this snack which tasted good!!

Ingredients
2cupsfrozen mixed vegetables
Use any
½cupinned chick peas
1apple (I used pink lady apple)
1tomato
bunchcoriander
salt and pepper to taste
1tbkslemon juice
1tspolive oil
curry leaves (optional)
Instructions
Boil the frozen vegetables by adding some water to it.
Discard the water from the canned chick peas, rinse and heat them with some water too.
Once boiled, discard water from the vegetables and chick peas and mix them in a bowl
Chop the apple and tomatoes and add them to the mixture
Add the salt, pepper, lemon juice, olive oil, chopped coriander and mix.
Garnish with curry leaves and serve this hot or cold.
