I ordered a panini maker online but couldn’t use it as it wasn’t the kind I had ordered. I was really disappointed as I was looking forward to making some paninis using a spicy mixed vegetable filling the kind you use to make samosas. So I improvised and made them using a frying pan like my son used to make them when he was at Uni. He used to make these with vegetables and cheese and by the time he finished Uni – the frying pan was too marked to bring home. I have named these sandwiches somasini on the suggestion of an Instagram follower:
3. Once hot and crispy serve them hot with crisps and any condiments like chutney or tomato ketchup.
These somasinis tasted great and we really didn’t need a panini maker for making them. Do have a go at making these somasinis.
