Aloo Paratha using mum’s recipe

Mother’s Day is celebrated earlier in UK than some of the countries round the World.  When Mayuri Patel a  blogger friend, who blogs at Mayuris Jikoni  asked  bloggers to send her a recipe  that was special for your mum for the upcoming Mother’s Day in May – it brought back memories of my mum and the food she used to prepare for us.  My dad was a chef and  used to prepare food at big events such as weddings and religious functions but he always came home to eat my mum’s home cooked food. My mum was a  good cook and she was very lucky to get my dad’s help whenever  we were entertaining.

When we asked her to make aloo parathas, she used to make these easy to roll soft and fluffy parathas. These are slightly different from stuffed parathas or plain parathas and a lot quicker to make.  My parents are not around any more but they both left us a legacy of recipes which we still enjoy making.  This recipe is in memory of my mum and dad as one was always incomplete without the other.

Ingredients for 8 – 10 parathas

  • 1 cup mashed potatoes
  • 2 cups chappati flour
  • 3-4 cloves of garlic – mashed using a garlic press
  • 3-4 tbls finely chopped coriander
  • 1 tbls salt
  • 1 tbls turmeric
  • 1 cup oil

Method:

  1. Transfer everything apart from the oil into a mixing bowl. Add 2 tbls of oil to the dough and start mixing the dough using your hands.  Use some warm water to finish binding the dough.  Once ready, cover and let this to rest for 30 minutes.

2. Knead the dough again and divide into 8-10 small balls.

3.  Using a rolling pin, roll out  the dough balls into  circle.  You can make big parathas or small ones – depending on personal preference.  I like to make small ones as they are easier to roll out.

4. Using a griddle or frying pan, lightly dry roast the parathas.

5.Spread a tiny amount of oil on both sides of the paratha and allow them to lightly brown.

6. Finish making all of the parathas and serve them hot with any curry.
