I used to live and work in London for more than 30 years and still find places I have never seen.  I was in London recently and saw something really unusual on the Millennium bridge.  As I crossed the bridge I saw an artist drawing something on the bridge.  When talking to him and other people watching his art – I discovered that there is hidden art on that bridge.  This artist known as the Chewing Gum Artist draws pictures on the chewing gum people have dropped on the bridge.  I took some pictures and am sharing a few.

Next time you are in London do take a walk on the Millennium Bridge  and look out for his cute drawings on the floor of the bridge.

Today’s recipe is one I created from a failed recipe.  Let me explain – most of us foodies love trying out recipes from other bloggers or websites. This is one dish that got created from one such recipe that didn’t work out.  Well I followed a bloggers’ recipe for making healthy pudlas (pancakes) from red lentils. I followed her recipe as they didn’t involve using oil to make them. I was excited and looking forward to making them. I soaked the lentils overnight and then ground them using some water. I added the spices and grated vegetables to it but when I tried to make the pudlas (pancakes) – it didn’t work. The pancakes  were thick and stuck to the frying pan. I was so disappointed. Anyway after a short break, I decided to bake the mixture into a loaf tin and make a veggie loaf (similar to handvo) which was oil free and tasty!! So sometimes failed recipes help us create a new dish.

Ingredients

  • 2 cups red lentils soaked overnight
  • 1 sweet potato -grated
  • 1 onion- grated
  • 1 tbls mixture of ginger, garlic and green chilies all blended
  • 2-3 small green chilies cut into small pieces (optional)
  • 1 tsp salt
  • ½ tsp turmeric
  • 2  tbls sesame seeds (save a few for garnishing)
  • ¼ tsp soda bi carbonate
  • oil to spray the loaf tin

Method

1. Soak the red lentils overnight and soak them overnight. Next morning blend them using enough water to give a make a thick paste. Transfer this to a mixing bowl.

2. Switch on the oven to 160°F and grease a loaf tin.

3. Add the grated sweet potato, onions, ginger, garlic and chili paste to the mixture

4. Mix it all and add the spices and soda bicarbonate and transfer the mixture into the loaf tin.  Save some sesame seeds for garnishing and sprinkle them on top of the loaf.

5. Bake it on a medium heat 160°F for 20 minutes and check by putting a knife through it. It may need a further 10 minutes to cook.

6.Allow to cool slightly before removing it from the loaf tin.  Serve it hot with a yogurt and coconut chutney.

  • ¼ tsp soda bi carbonate
  • Fry light oil to spray the loaf tin

Instructions

  • Switch on the oven to 160°F and grease a loaf tin.
  • Add the grated sweet potato, onions, ginger, garlic and chili paste to the mixture
