I went to the Premier of the Food-centric movie called The Hundred-Foot Journey a couple of days ago and was so inspired that I came up with the recipe for this vegan omelette recipe which is very similar to the savoury pudlas I make. The movie is about an Indian family played by actors Om Puri and Manish Dayal – who immigrate to UK and then Europe to make a living. This reminded me so much of my father who had emigrated from India to Kenya to make a living. He trained as an Indian chef and over the years became very famous caterer and restaurant owner but always said that he was a cook by profession rather than a chef. Indian food is very popular in Kenya even amongst the local people. Any way – back to the film: The Indian family open an Indian restaurant called “Maison Mumbai” which is only one hundred yards opposite a Michelin Starred French restaurant owned by Madame Mallory (Helen Mirren) – called Le Saule Pleureur. The film is about the rivalries between the two establishments and finally how bond. You really must see the film to get the full story and especially if you like good music, exotic food and amazing locations.
In one scene the French Restaurant’s sous chef (Actress Le Bon) tells Hassan (Manish Dayal) how Madame Mallory can tell how good a chef one is just by taking a bite of the omelette one makes. In one of the scenes, we see the Indian chef teach Helen Mirren to make an omelette following his recipe in which he uses so many Indian herbs and spices that it impresses Madame Mallory (Quote by Madame Mallory in the film after tasting the Omelette: “It’s sharp and cool in the mouth, all at once. Do you know how long it takes chefs to learn that?). Most of the dishes cooked and recipes shared were non vegetarian so I thought I would create something vegetarian. My creation aims to try and get a similar taste but it’s completely vegetarian and also suitable for vegans.
1. Sieve the chick pea flour and plain flour on a mixing bowl.
2. Add the grated sweet potatoes, onions, fresh peas , chillies, coriander and the dry spices (including soda bicarbonate) to the flour. Take one cup of warm water and mix to form a batter which should be runny similar to what an egg omelette mixture would look like.
3. Grease a non stick frying pan and spread the mixture on the frying pan. Allow it cook until it turns golden brown on one side and cook the second side. Try and use minimum amount of oil.
4. Serve the omelettes hot with a cool yogurt raita, tangy tomato dip and a fiery coriander chutney so that you can get to enjoy the hot and cool tastes of these Indian style omelette. (Note: The Raita is not Vegan)
