Mixed Vegetables and Tofu Stir Fry in Szechuan Sweet Chilli Sauce

As I mentioned in my last Post , family commitments have kept us really busy and we have resorted to cooking meals using ready ingredients.  It’s given me an opportunity to try out some of the ready sauces and noodles and I have been pleasantly surprised by how good some of their taste is. The ingredients mentioned were bought by me and not been sponsored by anyone.

Ingredients for 2-3 servings:

Method:

1.  Drain the liquid from the tofu and cut it into cubes.  Heat some oil into a wok and stir fry them until light brown.  Remove these from the oil and pat them between kitchen paper to remove the excess oil.

2.  Transfer the baby corn, peppers and stir fry mixture to the left over oil and cook it until the vegetables soften.  Add the fried tofu to the cooked vegetable mix.

3.  Add three quarters of  the  Szechuan sweet chilli sauce.  Only add the rest if your stir fry looks dry. 4.  Now add in the noodles and slowly mix them in.  Sprinkle salt and pepper to taste if required.

5.   A quick and easy meal ready to be served hot.
