I saw this video on Youtube a couple of weeks ago showing how to make a Bombay sandwich using chappatis if you did not have bread. I couldn’t wait to try out the recipe. My first experience of eating Bombay sandwich was in the Oberoi Hotel in Mumbai. It was deliciously hot and spicy.
For my recipe, instead of chappatis, I used corn tortillas. The video I watched shows a liberal use of green chutney which is a staple in most Gujarati homes. You can use any of your favourite spicy dips if you don’t have green chutney. I also used some of my homemade tomato chutney in the recipe as I happened to have made some. Again, you can use any spicy tomato sauce. The recipe also uses chaat masala which is a blend of spices and can be sprinkled on chips, curries etc. You can use any spice mix.
4 Corn tortillas
3 small boiled potatoes which should be sliced thinly
10 -12 slices of peppers
10-12 slices of tomatoes
10-12 slices of cucumber
2-3 tsps green chutney
3-4 tbls tomato chutney
2-3 tsps chaat masala
2 tsps oregano
2 cups grated cheese (I used cheddar)
2. Layer the potatoes on top of the green chutney and spread some tomato chutney on top of the potatoes. Also sprinkle some chaat masala if you want.
3. Layer this with sliced peppers and spread some oregano and chaat masala on the peppers.
4. Spread some cheese on the peppers. You can choose how much cheese you need to add. If you like cheesy stuff, add lots of cheese.
4. Cover this with a tortilla and start layering with cucumbers and tomatoes .
5. And more cheese…and cover with a tortilla.
6. Spread more green chutney on the tortilla, and top it with onions. I decided to do half with onions and half with peppers. Sprinkle more cheese and add a final tortilla to cover this sandwich. Spread some butter on the outside of the tortilla.
7. Cover this with a lid and cook on both sides for two minutes.
8. Remove and serve the Bombay sandwich using tortillas hot with any of your favourite sauces.
9. Not bad for the first attempt.
