Vegan Tempeh Sandwiches and Toasties

Doing Veganuary 2020 is introducing me to new ingredients. Tempeh is one of them. Being a food blogger – I had heard of tempeh but never cooked with it. It was my son who introduced it to me. LikeTofu – tempeh is also made from soya beans. Tofu is made from an extract of ground up soya beans whereas tempeh is made from fermented soya beans. There is lots of information on how to make tempeh and some recipes at this website.

Supermarkets in UK have started to stock up a lot of vegan alternatives and that’s where we managed to buy a block of tempeh. Like soya, tempeh on its own doesn’t have much of a taste but when marinated or added to a dish, it soaks up the flavours. As this was my first time of trying out tempeh, we decided to marinade and cook the tempeh to add to sandwiches.

We decided to marinade the tempeh using everyday spices such as turmeric, salt, dhana jiru( a mixture of coriander and cumin powders) and chili powder.  After marinading the tempeh we lightly fried the tempeh and added it to our sandwich or toastie with other fillings. The taste of tempeh was amazing.  Very similar to dall pakoras I make.

Ingredients:

  • I pack of tempeh
  • ½ tsp salt
  • ½ tsp turmeric
  • ½ tsp chili powder
  • ½ tsp dhana jiru (cumin and coriander powder)
  • vegan cheese
  • vegan coleslaw
  • Geeta’s mango pickle
  • few sliced onions (optional)
  • a few slices of pepper pr sweet chili pepper
  • some pickled piquante peppers or any bottled jalapenos or peppers
  • seeded bread
  • 2 tbls oil
  • soe vegan spread like Flora

Method:

  1. Slice the tempeh into 6-7 pieces.

2.  Mix the salt, chili, turmeric and dhana jiru in 1 tablespoon of oil and add the tempeh to the mixture.  Give the tempeha shakke so that the spice mix covers the tempeh.  Allow this to marinade for 30 minutes.

3.  Add one tablespoon of oil to a frying pan and slowly fry the tempeh with some peppers. Let the tempeh brown.

4.Once that’s cooked, just  assemble the sandwich using the rest of the ingredients.


5. Slice it and serve it cold.

Or toast it if you like it hot:

Again just slice the sandwich and serve it hot. For the hot toastie, I didn’t add the coleslaw.
