Papaya, Pear and Apricot Jam with saffron in MW

With the start of summer, we are really enjoying all sorts of fruit.  This week, I had a lot of pears and papaya which gone ripe so I decided to make some jam.  Whenever I make jam at home, I try and reduce the amount of sugar in the recipe so that we can enjoy the taste of the fruit and spices.  I make my jam fresh and in small batches as I do not use any preservatives or pectin.  It’s made using fresh seasonal fruit.

 

Ingredients for 2 medium jars (370 gms  & 340 gms jars)

  • 1 ripe papaya
  • 6 ripe pears
  • 10-12 dry apricots
  • ½ cup sugar
  • 2 tbls lemon juice
  • 1-2 sticks of cinnamon
  • 1 tsp cinnamon powder
  • 2-3 pinches of saffron
  • 1 tbls coconut oil

Method:

1.   Remove the papaya peel, cut it into two and remove the seeds. Grate the papaya.

2. Cut the pears, remove the seeds and grate them. 3. Transfer the grated papaya and pears into a microwave dish.  Chop the apricots into tiny pieces and add the to the grated fruit. 4. Add the sugar, lemon juice, cinnamon stick, powdered cinnamon and saffron to the mixture and stir.  cook this in the microwave at 2 minute intervals for 10-12 minutes depending on the size of your microwave.   5. Once all the moisture is removed, blend the mixture using a hand blender. Add one tablespoon of coconut oil to the jam and mix well.  6.  Allow to cool and store them in sterilised bottles. 

7. Enjoy this jam fresh and finish within a month.

Suma Wholefoods had sent me a sample of their Organic Coconut Oil which I am using in this recipe.  Over the weeks, I will share more of my recipes using the coconut oil.

Making jam at home is easy.  You can make it in the IP, MW or the cooker top.   Do try and use less sugar if possible so that you can enjoy it a bit more than the shop bought one which will have more sugar as well as preservatives.
