Our Veganuary Journey – easy meal ideas

One of our meals during veganuary was tadka dall and rice.  It’s a meal we have regularly as it is so quick and easy to make. Changing to a vegan diet  hasn’t really worried us  about what I am going to cook as a lot of my recipes can be converted to vegan.  Cooking from scratch is  highly recommended but sometimes we all need a bit of help.  Most of the supermarkets have increased their ready vegan meals so when you are busy, it’s nice to be able to pick something ready to heat and eat.  My son and I have scoured the ready-meal aisles  in several supermarkets to find some easy-cook dishes and hope to share our reviews  with you over the weeks. One of the supermarkets – Sainsbury’s had a whole area dedicated to vegan ready meals as well as vegan substitutes.  I picked up this vegan spicy masala chick pea pizza which I cooked as perthe instructions and I share my review here

This website – my vegan supermarket has also been really helpful in finding vegan choices as it has the biggest database of vegan products sold in UK markets.

As mentioned before don’t forget that there are so many of our regular everyday quick meals which are already vegan e.g. beans on toast, jacket potatoes with various toppings, curries etc.  Check out my recipes for the tadka dall and kidney bean and sweetcorn curry. Both these are easy to make and full of proteins.
