Refreshing Strawberry Juice

Last Saturday, I popped into the Local Farm shop to buy locally produced apple and pear juice and honey as well as locally grown strawberries.  The farm has had a glut of strawberries so the the shop assistant  gave me two big bags of very ripe strawberries. So all weekend, I have been trying to use up the strawberries to create some new recipes .   I  also took a big bag to the office so colleagues can also enjoy them.  I made this amazingly tasty jam and chutney.  Yes, jam is quite a common recipe but the chutney was an exceptionally exciting recipe.

As you know we very rarely get pure strawberry juice.  Most commercial ones add sugar and water to the juice.   The best way to have them is with no additions to the fruit.  As I was making quite a few bottles I added some lemon juice to act as a preservative.

Ingredients:

3 lbs of strawberries
2 tbls lemon juice

Method:

1.  Wash the strawberries and remove the green stalks.

3. Transfer all the strawberries to the juicer and collect the juice ready to drink.

4. Enjoy the juice with no additions.   Please note that strawberries contain natural sugars so drink in moderation if you are a diabetic.

If you wish to keep the juice in the fridge for a couple of days or wish to freeze the juice, add the lemon juice to it.
