Yes, it’s that time of the year again! After going on an amazing Veganuary journey in 2019 (along with 250,000 people!), I’ve decided to have another go. All throughout the month, I will be sharing helpful hints and advice on how to eat more plant-based food and have fun doing it!
For my first post, I wanted to share three easy and simple recipes that will help get your own Veganuary journey off to a flying start.
These basic vegan recipes are perfect, whether you’re scrambling around the empty kitchen cupboards after Christmas, or whether you’ve had a big vegan haul at Aldi are are now wondering what to do with that giant block of tofu.
This quick, easy and tasty vegan curry is the perfect way to start exploring tofu. My recipe for tofu mutter paneer is guaranteed to blow away the claims that tofu is bland, tasteless and hard to cook with!
Mutter paneer is one of the most popular curries in the UK, delighting vegetarians and omnivores alike because of the consistency of the paneer cheese that’s used. Replacing it with lightly fried tofu makes it an enticing vegan Indian dish, especially when complemented by simple steamed rice or naan breads. I even have a recipe for quick vegan naan breads! A complete vegan meal in minutes that’ll leave you wanting more.
Another super-simple vegan recipe is this tasty and unusual vegan salad. By keeping the cous cous and the salad veg crunchy, it’s miles better than a limp, shop-bought salad that costs £8! Adding black eyed beans (or any other beans) makes it a complete meal for that all important protein — because you just know everyone’s going to be asking “where do you get your protein?”. Perfect to make the night before and take to lunch at the office.
Vegan mexican chile is one of my son’s favourites! Mexican food, like Indian food, is very easy to make vegan. By using fresh vegetables and spices, you can easily create a delicious dish in no time at all. I love the flavours, textures and the aroma of this vegan chilli as it’s bubbling away. Even though it’s quite quick to make, the longer you can simmer it, the better it will be. Perfect for weekend meal prep!
