Sweet Potato Halwa in Instant Pot (farari seero)

On the days Hindus fast, there is a list of foods that they are “allowed” to eat. The list – often referred to as farali food – includes all the fruits and nuts, milk and milk products including yogurt. It also includes potatoes, sweet potatoes, cassava, tapiaco, ragigara, Morio and amaranth etc…. In fact, the sumptuous delicacies you can eat in place of everyday food makes you feel that you are having a feast because of the variety you can make.

This sweet potato dessert was really easy to make using the Instant Pot.   The Instant Pot is an electric pressure cooker that has several other  functions, including pressure cooking, slow cooking, rice cooking, steaming, warming and sautéing — all in one appliance that helps expedite the cooking process.  It also works as a yogurt maker and a dough proofer.

Ingredients

  • 2 tablespoons melted salted butter (vegans can use coconut oil)
  • 2 medium sweet potatoes washed and grated
  • ¼ cup oats milk (you can use any milk)
  • ½  cup  sugar
  • ¼ tsp ground cardamom
  • ¼ tsp nutmeg
  • pinch of saffron
  • handful of sliced almonds

 

Method:

  1. Turn the Instant Pot to Saute mode. Add the butter, grated sweet potatoes, almond milk, sugar, cardamom, nutmeg and saffron.  Mix well and you will notice that the sugar has started to melt.

 

2.   Once it’s all mixed up, press Cancel and select manual.  Set the time to 2 minutes and close the lid. Allow to cook and do not open until all the pressure is released naturally.

3. Now safely open the lid and transfer the halwa to a serving dish.   Garnish with nuts and serve the halwa hot.  If for some reason, the halwa looks runny, you can use the saute mode to cook the mixture a bit longer.  

 

My favourite farali/farari dishes  are:

Farari kachoris  – These are Spicy Coconut and Nuts Stuffed in Mashed Potatoes

Farari bateta nu shak – This is a simple potato curry which has nuts and cumin seeds.

Farari Sambharo – This is a stir fry with sweet potatoes and chilies

Sweet potato Halwa is also a great dish to have when fasting.

Sweet potato rings cook fast when you want a quick snack.

Spicy Sweet Potato Juliennes make a great snack too.
