Cauliflower and Sweet Potato Soup in Froothie Evolve

Since I got the  Froothie Evolve  I have been experimenting a lot and trying out lots of dishes in it.  I have become a big fan of soups and smoothies. Over the last couple of weeks week I made a  hummus, Coriander and Chili Chutney/Dip in Froothie Evolve,  Carrot soup and tomato soup. This week I used the Froothie Evolve to make quick and easy no oil cauliflower and sweet potatoes soup. This is the first time I made this soup and it was so delicious that my husband has requested I should make it at least once a fortnight.  The soup can be made on the stove top too but I like making it in the Froothie Evolve as it cooks well and I don’t have to keep stirring it.  It gives me a chance to do other chores.

Ingredients:

  • 1 cup chopped cauliflower
  • 1 small sweet potato
  • ½ tsp turmeric
  • salt to taste
  • 1 tsp bouillon powder (they do have vegetarian and vegan ones)
  • 4 medjool dates
  • 1 can coconut milk (400 mls)
  • 2-3cloves of garlic
  • 1 inch of ginger
  • 1 green chili
  • sliced onions for garnishing
  • pepper (optional)

Method:

1.  Add about 100 mls of water in the froothie jug (Please note: With Froothie Evolve you get 2 jugs – both made of tempered glass.  One jug has a heating element which allows you to cook & blend or steam & blend and is perfect for soups so I used that one.)   Place the cauliflower, potatoes and dates in the steaming basket in the blender and then either manually or using your bluetooth choose the steam option. This should take 30 minutes. Once steamed, remove the steaming basket carefully and keep aside.  Remove the water used for steaming.  Remove the stones from the dates.

2. In the same jug, add the steamed vegetables, dates, ginger, garlic, bouillon powder, salt, turmeric and the coconut milk.  Also add half a cup of water.

3.  Switch on the Froothie manually or using your bluetooth, pick the right soup option. You have the choice of smooth or chunky soup. I chose smooth soup. The soup is set to cook 30 minutes. About halfway the soup stirs and blends itself to perfection. All the stirring and blending makes the soup really creamy.

4.  To give your soup some heat, slice the chili and add it to the soup. Serve it hot garnished with sliced onions.

We loved the creamy sweet soup.  It was perfect for a cold afternoon.  The soup is also a healthy option as I don’t use oil in this recipe.  Once you have garnished and served your soup, you only need to add some water and a drop of washing up liquid to the jug and set up the cleaning option.
