Dates, Nuts and Protein Powder Energy Balls

This week anyone celebrating Diwali will be making or buying sweets and savouries .  Are you Looking for ideas of making sweets for Diwali?  Well I have another one of my no cook recipes for date and nuts energy bars for you to try. This recipe is  quick and easy to make and will impress your guests.    This recipe has dates, nuts, honey and protein powder topped with chocolate. The dish looks amazing and it’s full of all high energy products.  You can leave out the chocolate coating and just enjoy the energy balls if you wish.  As it’s Diwal itime, I decided to dip the energy balls in chocolate.

The main ingredients I used are:

Mixed nuts:  You can use any nuts.  I used almonds, walnuts, cashews and peanuts.

Dates: I used sukkari dates but you can use any soft and fresh dates.

Peanut Butter: I used the smooth creamy one. Peanut butter is high in proteins and also help bind the bars.

Protein Powder: You can use any brand or flavored of protein powder you have. I used the Impact Whey Protein Powder which comes in lots of different flavours. This protein powder was recommended to my husband by my son who is a physiotherapist who exercises a lot. This powder contains high-quality protein, which contributes to the growth and maintenance of muscle. This protein powder has sweeteners so no extra sugar is added to the bars

Chocolate: I used cooking chocolate but you can use any chocolate.

Coarse salt: Just adding a little coarse salt gives this dish a salted caramel kind of a feel and you won’t stop eating these energy balls.

Is this recipe vegan? This particular recipe isn’t vegan but very easy to make it vegan by substituting the chocolate and chocolate chips to vegan chocolate.

Ingredients:

  • 2 cups of sukkari dates with the stones removed.( you can use any moist dates)
  • 2 cups of mixed nuts
  • 1 cup of peanut butter
  • ½ cup of protein powder (optional)
  • ¼ tsp coarse salt
  • handful of chocolate chips ( you can use any) (vegans can use vegan chocolate chips)
  • 150 gms of dairy milk chocolate ( you can use white chocolate too) ( vegans can use vegan chocolate)

 

Method

 

  1. Transfer the dates, nuts, peanut butter and salt into a food processor and blend.   Once it’s blended, transfer these to a mixing bowl and add the chocolate chips.

 

2.  Using your hands mix in the chocolate chips and form small balls.  Transfer these balls into the fridge for an hour.

3.  After an hour, melt the cooking chocolate following the instructions on the pack.    Dip the balls into the chocolate using a fork or a toothpick.  Allow these to cool on some greasproof paper.

4.  Transfer these energy balls into the fridge for an hour.

5.  Remove these energy balls from the fridge and enjoy one a day. Any left over ones should be stored in the fridge.
