Nutty Energy ladoos/ balls with Dates

The inspiration for these energy balls were from watching an Instagram live session by A friend Nayna Kanabar whose Instagram is Simplyf00d. The video can be seen here.

Method

  1. Toast each batch of nuts in the microwave ( 1-2 mins) or a dry frying pan until they are warm. Do these separately as each nut cooks at different temperatures. This will help release all their natural oils.

2.  Coarsely Grind each batch of nuts and transfer to a mixing bowl.

3.  Toast the oats and desiccated coconuts for 30-40 seconds in the microwave and add to the mixing bowl. I used Ready brek oats so they didn’t need to be ground. If you use normal oats- toast and grind them.

4.  Roughly grind the dates and add them to the mixing bowl.

5.  Heat the jaggery for 20-30 seconds. It should become soft and start to melt. Add this to the mixing bowl.

6.  Add 2 tbls of honey (vegans can use mepal syrup).

7.  Optional : If you want to add gund- heat the ghee and add the gund to it and let it pop. (Vegans can use oil). Once cool, grind it and add it to the mixing bowl.

8. Carefully mix everything ( in case the gor is still hot-be careful).  Now you can start forming the energy balls either making round balls or using a mould. You can also press them in a tray and cut into bars.

  • Half a cup desiccated coconut
  • 1 cup almonds
  • 1 cup cashew nuts
  • 1 cup walnuts
  • 1 cup Brazil nuts
  • 1 cup dates with the stones removed
  • 1 cup Jaggery (gor)
  • 2 to 3 spoons of honey( vegans can use mepal syrup)
  • 1 tsp gund (gum arabica) optional)
