Apple Tart

Hope that everyone had a lovely Christmas and New Year.  This year we celebrated our first Diwali and Christmas without my husband.  As a family, we still wanted to continue the tradition of celebrating these festivities by being together.  Diwali was really special for my husband and he really loved meeting family and enjoying all the Indian sweets and savouries we make and buy.  Things were still a bit too raw for me this year  and I couldn’t bring myself to make any of the dishes for Diwali.  I couldn’t even bring myself to invite anyone home.  And I think a lot of people didn’t get in touch with me, to wish me a Happy Diwali, as it probably felt awkward to them.  It did feel emotional for me so I arranged a cookery lesson that weekend and spent the day teaching and spent time with people who didn’t know what I was going through.  It was better that way for me.   By December, I felt a  lot better and was able to continue with the tradition of celebrating Christmas with my family.  I was also able to make the Indian savouries like samosas, kachoris, sev mamra, sev and tikha gathia  etc for them.  Being vegetarian, I always like to ask my sons what they would like to eat.  This time they had requested vegan lasagnia where we used silken tofu instead of ricotta cheese and it turned out amazing.  We also made two kinds of vegan desserts using Granny Smith apples and this is the first one.   This is more that an Apple tart but using some easy to use ingredients such as shortcrust pastry and apple sauce.

Rolled Sweet shortcrust Pastry : This is accidentally vegan.  It’s easy to use and so cheap that it would be a shame to be spending time and energy making pastry.

Apple sauce:  Again such a cheap vegan ingredients – makes life easy when making apple pie.

Ingredients:

  • One packet chilled ready Rolled Sweet Shortcrust Pastry (accidentally vegan)
  • 420 mls of vegan applesauce
  • 2-3 Granny Smith apples sliced thinly
  • 2 Granny Smith apples chopped into cubes
  • 1 tbls sugar
  • 1-2 tsp cinnamon
  • 1-2 tsp icing sugar

Method:

  1. Preheat the oven at 180° C

2   Roll out the pastry sheet and place it in the baking tray.  Prick the pastry sheet with a fork and bake it for 10 minutes at 170 degrees.  One baked, allow this to cool. 

3.  In the meantime- mix the applesauce and chopped apples in a bowl and add one tablespoon sugar (Only add more if your apples are sharp).

4.  Transfer the apple and apple sauce on top of the baked pastry.  Sprinkle the cinnamon on top of the apples.

5. Now pack the top with sliced apples and sprinkle some icing sugar on top.

6.  Bake this 180° C for 30 minutes or until golden.  Once cooked, let it cool. You can warm it again just before serving it.

7.  Sprinkle with icing  and serve it warm with cream.

 

 

Surprisingly, this dessert was really tasty and we will be making this often.
