Coconut and Almond Flour steamed Dumplings (Muthias) – Keto friendly

I am following a Keto diet for health reasons.   The main aim of the keto diet is to lower the amount of carbs you intake but increase the amount of fats.  This is often referred to as the Low Carbs diet. When you don’t take any carbs, your body enters into a phase called ketosis.  When this happens, a number of good ketones are released which will encourage your body to use your body fat to convert it into energy.   The internet has lots of information about this diet and I am still getting used to changing my lifestyle and over the coming weeks,

These muthias are made with keto friendly ingredients.  The normal recipe for Muthias is here.

Ingredients:

  • 1 cup almond flour
  • ½ cup coconut flour
  • ¼ cup Psyllium husk
  • 1 cup grated cabbage (you can use grated courgettes too)
  • 1 small grated onion
  • 2-3 cloves of garlic – minced using a garlic press
  • 1-2 tbls grated ginger
  • 1-2 green chillies chopped finely
  • salt to taste – use the pink Himalayan one if possible
  • ½ tsp turmeric
  • 2-3 tbls yogurt
  • a big pinch of soda bi carbonate
  • 2 tbls olive oil

For tempering & garnishing:

  • 1 tbls sesame seeds
  • ½ tsp mustard seeds
  • 2 tbls olive oil
  • few strand of coriander or desiccated coconut
  • few slices of red or green chillies

Method:

  1. Put the three flours in a mixing bowl.

2.  Add everything else apart from the ingredients needed for tempering into the bowl and mix.  If the mixture looks dry, add some warm water to make a dough soft enough to form small balls.

3.  Shape the  dumplings like elongated sausages and either put them in silicon cups like I have done or spread them on a greased tray/plate which can be put in a steamer.  I used my Instant Pot to make the dumplings/ muthias.  For the Instant pot the cooking time is 5 minutes NPR. For the steamer, please allow 20 minutes and then check that the dumplings/muthias are cooked.  Once cooked allow these to cool down.

4. Once cool, cut them into slices.  They are delicate so use a sharp knife. At this stage you can eat them but tempering them makes them taste even nicer.

5. Hear 2 tablespoons of olive oil and add some sesame seeds to the oil. Once they sizzle a bit, add the dumplings/muthias to the oil, toss them slowly so that they are coated in that oil. You can brown them a bit if you like them crunchy.

6.   Serve them hot with a cucumber raita .  The recipe for the raita is here .  Just use thick Greek style yogurt to make it.  I enjoyed the dumplings/muthias as they were tasty and filling.
