Apple salad with sweet and sour dressing

Every week, we buy a lot of fruit and often apples get eaten quickly as they are so easy to carry with you with your lunch. The apples are tasty and nutritious. The crunch makes them interesting to eat and once you have eaten them , it makes your mouth feel fresh.

What apples are the healthiest?

Research shows that the Granny Smith is the healthiest as it has low sugar, high fiber and high mineral levels. It also improve the gut bacteria associated with reducing obesity. I like Granny Smith apples as they have a sweet sharpness which other apples don’t have. They are great for cooking too and you can use them for making chutneys, apple crumble or even sambharo.

What is your favourite apple?

Everyone has their own favourite apple.  Mine has always been the Pink Lady Apple.  I like it’s taste and crispiness.  I also fine that they don’t go brown as quickly as some apples when they are cut to use in a salad. So I like to use them when serving fresh salads with apples in them.  Whilst researching this apple I found that the Pink Lady is a trademark – the actual variety of the apple is  Cripps Pink. The brand is owned and licensed by Apple and Pear Australia. It is grown, with permission, in a range of countries but not in the UK. UK growers are not allowed to grow it because the trademark holder is worried the climate will not do it justice.  Now that I know where this apple comes from – I will look for a locally grown apples as I do want to support local farmers.

Can you add apples to a salad?

If you asked my younger son, his answer would be Nooooo…. He is of the opinion that apples or in fact any fruit should not be added to salads until you mention the Waldorf salad to him.  I like adding apples and other fruit to my salads as they  add sweetness and crunch to any salad.

 

I tend to make small salads with most of our meals as this is a good way of adding fresh greens to my diet.  I eat the salad first as it helps to make me feel fuller and the temptation for eating extra rice or chapatis is reduced.  For most salads, it’s the dressing that makes it tasty and memorable.  You can use any salad ingredients for this dressing.

Ingredients:

  • 1 apple ( use any.  I used Pink Lady Apple)
  • 10-12 cherry tomatoes
  • 1 sweet pepper
  • 2 tsps sesame seeds

For the Dressing:

  • 1 tsp honey (vegans can use Maple Syrup)
  • 2 tsps lemon juice
  • salt and pepper to taste
  • Chaat masala to taste (optional)
  • dash of soy sauce
  • dash of olive oil
  • 1 tsp of tamarind and dates chutney

Method:

  1. Wash and chop the apple, tomatoes and sweet pepper and transfer to a bowl.

2. For the dressing:  mix olive oil, honey, lemon juice, soy sauce, tamarind and dates chutney, salt, and pepper in a bottle. Cover and shake well. Drizzle the dressing over salad.

 

3. Mix the dressing and garnish with sesame seeds.

4.  Serve chilled as a salad or a side dish with an Indian meal.
