Pomegranate Salad with Orange Dressing

Summer time in London is great and this is the time to explore the variety of markets and you are sure to find one that you would like to explore.

Here is s useful guide to the well-known and up and coming London street markets offering food, flowers, arts and crafts, fashion, textiles, antiques, collectibles and much more.   My favourite is the Borough Market which is one of  London’s oldest food market.   This market is a foodie’s heaven and you will be able to find at least one of your favourite dishes here.

Summer time is also a good time to pick up  lots of lovely fruits and vegetables  going for a bargain.  No Indian food is complete without a salad, chutney of some sort, pickles, raita and papads .  My mum managed to make these using whatever was in season using everyday ingredients and spices.  Like my mum  I try and include a variety of fruits and vegetables in my meal and a salad is a good way to do that.  This salad is one such example.

Ingredients:

    •  seeds of 1 pomegranate
    • ½ a pepper (chopped)
    • ice berg lettuce
    • ½ apple (chopped small) ( I used Pink Lady apples)
    • 1 carrot (grated)
    • 1 tomato(chopped) or 4-5 halved cherry tomatoes
    • 2-3 inches of cucumber (grated)

For the salad dressing:

    • 1 orange
    • salt to taste
    • ½ tsp pepper
    • 2 tsps oregano
    • 1 tbls Olive OIl

Method:

  1.  Cut the pomegranate in half and remove its seeds ready to go in the salad.
  2. Prepare all the other salad ingredients by chopping or grating them
  3. Squeeze the orange juice in a mixing bowl and add the other dressing ingredients and mix well using a whisk.  Leave the dressing in the fridge.
  4.  Just before you are ready to serve – whisk and add the dressing and mix the salad.

    pepper any colour
  • 5-6 leaves iceberg salad cut small
  • ½ 

    apple chopped small
  • 1 carrot grated
  • 1 tomato or 5-6 cherry tomatoes halved cut small
  • 2-3 inches cucumber grated

Salad Dressing

  • 1 orange to be juiced
  • salt to taste
  • ½  tsps pepper
  • 2 tsps oregano
  • 1 tbls olive oil extra virgin
