Peppers, Onions, Tomatoes and Passion Fruit Salsa (Vegan)

With most of my Indian meals, I like to include a salad, chutney, raita or a salsa dish using whatever I happen to have in the fridge. I rustled up this salsa recently which just happened to be vegan. As I keep telling all my friends – most vegetarian meals happen to be vegan or can be created to be vegan.

Ingredients:

    • 1 passion fruit
    • 1 yellow pepper
    • 1 medium red onion
    • 1 medium tomato
    • salt to taste
    • pepper to taste
    • ½ tsp cumin powder
    • ½ tsp chili powder
    • 1 tsp tomato ketchup
    • chili flakes to taste and garnish
    • 1 tsp Olive oil

Method:

  1. Prepare the vegetables by grating the onions, peppers and tomatoes using a mandoline slicer.  Transfer these into a mixing bowl and add the passion fruit pulp and seeds to the grated mixture.

2.  Sprinkle all the dry ingredients, and add the ketchup and Olive oil and mix well.

3.   Garnish it with Chili flakes and serve with any meal.
