Tortillas filled with stir fried spicy potato mixture

Are you bored eating the same old sandwiches?  Do you fancy something spicy and tasty for your lunch? Well, Tortilla wraps can be used instead of bread and you can fill them with a variety of fillings. For my tortillas, I cooked a couple of potatoes in the microwave and then just spiced them up like you would bateta vada filling.  These are perfect for vegetarians and vegans.

What kind of tortillas should you use?

You can use any make of tortillas which are readily available in the supermarket.  The same filling can also be used on bread and this can be grilled or toasted too.

Ingredients:

  • 4 Tortillas
  • 3-4 tbls my coriander chutney
  • 3-4 tbls Olive oil
  • 10 cherry tomatoes
  • ½ inch cucumber
  • 3-4 spring onions
  • 2-3 red peppers
  • 2 green chillies (sliced)
  • 3-4 boiled potatoes
  • 1 cup grated cheese (Vegans use violife or similar cheese)
  • 2-3 tsps Chaat masala (optional)
  • salt and pepper to taste
  • small bunch of coriander
  • 1 tsp garam masala
  • 1 tsp sugar

Method:

  1. Prepare the spicy potato filling (bateta vada filling).   Remove the skin from the boiled potatoes and mash them up.  Add the salt and pepper to the potatoes.  Add in the green chillies, lemon juice, sugar, garam masala and coriander.  Mix well and taste.

2. Prepare the tomatoes, cucumber, peppers and spring onions by slicing them.  If you are using Chaat masala, sprinkle that on them.

3.  Layer the spicy potato mixture on half the tortilla and the hot green chutney on the second half. Also top half the tortilla with sliced tomatoes, cucumber, spring onions and peppers.

4.  Sprinkle grated cheese on half the tortilla. (vegans can use any vegan cheese.  We used violife)

5.  Fold the tortilla in half and spray it lightly with olive oil and grill it under a medium grill for 2 minutes each side or until it’s  crispy and hot.  The heat will also melt a bit of the cheese which makes the tortilla taste great.

6.  Cut the tortilla into small triangles and serve them hot with salad or crisps.
