Choco-Nut Energy Bars – Vegan and Vegetarian Options

With Diwali just around the corner, I thought I’d make a slightly different treat this year. These Choco-Nut Energy Bars are a lovely alternative to some of the traditional Diwali sweets. Made with mixed nuts, dates, oats, peanut butter and seeds, they are full of flavour and have a lovely crunch.

I’ve also made two versions – one with dark chocolate for my vegan friends and another with milk chocolate for those who prefer the vegetarian option. They are easy to prepare ahead of time and are perfect for sharing with family and friends during the festive season.

If you enjoyed my original Choco-Nut Energy Bars recipe from 2022, you might like this updated version too. I’ve made a few changes, including adding mixed seeds and offering both vegan and vegetarian chocolate toppings.

  1. Add the roasted mixed nuts, porridge oats and pitted dates to a food processor. Blend until you have a chunky mixture. Don’t over-process it; you want to retain a little texture. Transfer to a mixing bowl.
  2. Add in the peanut butter, butter, salt and  vanilla essence .  Mix all this well.
  3. Divide the mixture into 2 so that you can create a vegan option too. Line the 2 trays with greaseproof paper and press in this mixture using the back of a spoon.
  4. Once the mixtures are both layered smoothly, transfer them to the fridge for an hour.

Topping Two:

  1. Break the milk  chocolate and add the butter to it.  Melt the chocolate using the microwave. The best way is to cook them in 30 second intervals.

Once both Cool, cut the energy bars into squares or rectangles and store them in a sealed container in the fridge.
