I went round a friends house to teach her how to make samosas and she happened to have these lovely new mini potatoes. I thought these would make a great snack. I told her a bit about the foods we eat during the Indian fasts and she really wanted to try the dry potato farari shak that I usually make when I am fasting. So this is what we came up with using the ingredients in her pantry.
Ingredients
- 20 small mini potaoes
- salt and pepper to taste
- 1 tsp cumin seeds
- 2 tsp sunflower oil
- 2 fresh green chillies
- handful of almonds
- handful of cashews
- handful of peanuts
- 1 tsp lemon juice
- 2 tsp sugar
Method:
1. Boil the potatoes in their jackets and once cool- peel the potatoes. This cook us about 15 minutes.
2. Heat the oil and add the cumin seeds. Once they brown, add the nuts to the oil and stir until lightly browned.
3. Add the boiled potatoes to the mixture; add the salt, pepper, sliced fresh chillies, sugar and lemon juice and allow to cook on a medium heat for 5-7 minutes.
4. The potato snack is ready to serve. Unfortunately we didn’t have any coriander but it tasted great. I came away with a large bag of these mini new potatoes which I will use to make stuffed vegetable curry we call bharelu shak.
We did make some samosas too!!
