Spicy Pizza Type Pancakes

Last week, I learnt so much new just by taking part in the challenges set by Darren Rowse on the ProBlogger Challenge Group.   One of the challenges was to create a piece of content in the form of a story.  That was my hardest challenge so I am going to try and include a bit more in my blog posts from now on.

So before I share my exciting recipe – Let me ask you something?  How many of you are hooked/addicted to your smart phones?  Have you ever tried to detox yourself and not use it for a day or two? Well this week, I thought that I would see how I get on without my phone for a couple of  days. On the first day as soon as I left for work, I started to miss my phone as I needed to check the time of my train!!  On the platform, I looked around and everyone was staring at their phones looking so occupied.  I used the time to watch the people on the platform and trying to guess what their profession could be.   Once I got on the train, I couldn’t text home to inform that I had managed to catch a train.  But then why do I need to inform such useless information to my husband?  On the train, I was “forced” to keep occupied by reading a newspaper- Usually, I check my emails, Facebook and twitter accounts.  On the way to the Office, I listened to music on my MP3 player which I have never used or appreciated since all my music is now on my smart phone!! Once I got to the Office, I couldn’t access some accounts as all my passwords were stored in my phone. On the positive side, I actually had a conversation with my colleagues and managed to go for a walk at lunchtime instead of looking at my phone!! I did miss my phone though!!

On the second day –  I was meeting some friends for lunch in a village about 40 miles away and I had to print off the route as I could not use Googlemaps on my phone.   Actually I enjoyed the drive as it made me look for the road signs and remember land marks for the return journey.   When I got to lunch, I couldn’t take any photos as I use my phone camera for pictures and videos. We are loosing the art of conversation and one day we will all be hunch backed as we spend so much time on our Smart phones. My friend was proudly showing pictures of her baby on her Smartphone so I did start to miss my phone.  I use the mobile to look up recipes on my blog and others, play games, check the weather, whats app, messenger etc..

I do realise that I spend too much time on my smartphone and need to try and strike a balance.  So how many of you can’t live without your Smart phone for a day? Would you like to take the detox challenge?

To take my mind off my smartphone, I decided to try out a recipe my husband had written down for me after watching Chef Rakesh Sethi’s cooking program.  The recipe was called Uttapam Pizza but we named it Spicy Pizza type pancake as not all our readers would know what Uttapam is.  Uttapam is a kind of a vegetarian pancake made from ground rice or lentil batter which is often fermented.  This recipe is  the instant version of uttapam using a variety of  flours rather than lentils.

Ingredients for the batter (makes 6-7)

For the topping (you can choose whatever you like)

  • I onion chopped into small pieces
  • 4-5 sliced cherry tomatoes
  • 1 sliced capsicum
  • 2-3 sliced sweet peppers
  • 2-3 sliced green chillies (optional)
  • ½ cup of sweet corn
  • 1 cup grated cheddar cheese

Method

  1.  Mix the 3 flours together with the salt and soda bi carbonate.  Add a cup of water to it and mix.  Add a bit more if the batter feels too thick.  Leave this covered in a warm place for 20 minutes.P1220145

To make spicy pancake pizza,

  1. Add 1/2 Teaspoon oil to a non stick frying pan pan and make small round pancake. If it’s too thick add some water and if its too runny – add a bit of plain flour.P1220151

  4.  Cook the pancake on low flame on one side until the base is golden brown. P1220154
  5.  Place the pancake under a grill To cook the top of pizza place it in a grill until cheese is cooked.P1220156P12201616.   Now you know why we decided to name this dish spicy pizza type pancakes.  Serve these hot with coconut chutney.

    Nice and colourful pizza pancake.. I watched this episode of Rakesh Sethi too. and I once had the opportunity to share the stage and cook along with him too. And talking about smart phones, you are right . People are getting addicted to them.

    Mina, the pizza pancakes are just too tempting. Love the colour and who wouldn’t love the cheese on top. I seriously try not to use my smart phone every minute I am free. Yes I use it for photos, timing, alarm, contacts etc etc but don’t check other apps all the time.
