These protein bars were supposed to be healthy bars as I have used nuts, dates, protein powder and peanut butter. However, I got tempted by chocolate so I would say that these bars are addictive and should only be eaten in small amounts. These were perfect to have after gym workout. The bars don’t take long to assemble and do not need to be cooked. The method for making them is very similar to my White Chocolate-Walnut and Dates Bar.
The main ingredients I used are:
Muesli: I used our everyday sugar free muesli. you can use any brand.
Sukkari dates: You can use any dates which are soft. We like these as they are extremely soft and very sweet.
Walnuts: These have a high amount of omega-3 fatty acids so I like to include them in these bars,
Peanut Butter: I used the smooth creamy one. Peanut butter is high in proteins and also helps bind the bars.
Protein Powder: You can use any brand or flavored of protein powder you have. I used the Impact Whey Protein Powder which comes in lots of different flavours. This protein powder was recommended by my son who is a physiotherapist who exercises a lot. This powder contains high-quality protein, which contributes to the growth and maintenance of muscle. This protein powder has sweeteners so no extra sugar is added to the bars
Chocolate: I used Cadbury whole Nut and Ferrero Rocher which just happen to be my favourite chocolates. You can use any.
Ingredients:
- ½ cup sugar free muesli
- 1½ cups pitted dates
- 1 cup walnuts
- ½ cup protein powder (Any make is fine)
- 1 tsp coarse salt
- 1 tsp vanilla essence
- 1 tbls butter (vegans can use plant based Flora)
- ½ cup peanut butter
- 200 gms of whole nut chocolate
- 15-16 Ferrero Rocher
Method:
- Transfer the muesli, dates and walnuts to a food processor and blend. Transfer the mixture into a bowl and add the protein powder and peanut butter. Add the vanilla essence and salt too.
2.Line a tray with grease proof paper and firmly pat the mixture into a square and keep it in the fridge for an hour.
3. Melt the whole nut chocolate bar in a bowl in the microwave. Once it’s melted, add in the Fererro Rocher chocolate and stir. These chocolates will also start to melt. You may wish to warm the chocolate mix for 10-20 seconds more if you wish. The idea is not to melt the Fererro Rocher completely. Transfer this melted chocolate mix over the nut mixture. The chocolate will LOOK rocky because of the nuts and half melted Ferrero Rocher.
4. Allow this to cool for an hour in the fridge. Cut the slices and enjoy them. The left over bars should be kept in the fridge.

Ferrero Rocher and Whole Nut Chocolate Topped Rocky Protein Bars
Ingredients
