Want a quick but healthy lunch or dinner?
Add these ingredients to your shopping list and you’ll have a meal ready to go in no time.
Ingredients
- Pack of pre-made, chilled falafel such as these from Cauldron
- Selection of cooking peppers (capsicums), red onions and red chilli (optional)
- 1 pack (250 grams) Halloumi cheese
- Soft tortilla wraps (seeded for extra omega oils)
- salt and cumin powder to taste
- 2-3 tbls passata
How to prepare
- Chop the vegetables roughly
- Place the falafels in the oven following pack instructions
- Slice the halloumi and fry on a cast iron griddle, or a frying pan. Let them brown slightly after they sizzle and pop.
- Quickly sautee the vegetables with your favourite spices (e.g. 1 tbsp cumin & 1/2 tbsp paprika) and some tomato passata
- Slice the hot halloumi into fingers
- When everything is hot, construct the wraps
- Place some of the vegetable mixture on the wrap, top it with halloumi fingers
- Wrap tightly if you’re eating on the go
- Or leave a bit open to bite into
- Or let your family build their own wraps by serving it at the table
